Learn how to make an easy ricotta and taste it in a few applications! From crostini to pasta sauce and as dessert. Light, colorful, seasonal and tasty!

Join Chef Rosa Mariotti from Molto Ono to learn how to make your own fresh ricotta. Chef Rosa will show you the simple steps of making ricotta with ingredients that are widely available. Then, she will use the freshly made ricotta to prepare:

  • Crostini/bruschette with ricotta, pears, walnuts, and honey
  • Pasta with ricotta, cherry tomatoes, and basil
  • Cannoli filling with ricotta, chocolate, and orange zest made by Chef Rosa's hands
We will sit down together and enjoy the delicious dinner in the open lounge by the pool under the stars. 

Rosa Mariotti is a local chef, residing in Maui. Rosa was born and raised in the green heart of Italy: Umbria. She got her formal training in Oregon where she also got degrees in Hospitality management,  Culinary and international Pastry. She has worked professionally as a kitchen manager and recipe developer  for almost 20 years. Clients include local Mochi Foods and Kumu Farm and Rachel Ray magazine. She has baked professionally at Sugar Beach bakeshop and assisted the internationally acclaimed Nick Malgieri during his book tours. Rosa has ongoing classes in Kona and Maui where she also teaches at UHMC. Her approach to Italian Cuisine involves lesser know traditional Italian classic recipes, all made from scratch,  with a deep analysis on dish origins/ its geography, food history and sustainability ( Localvore ) and flavor/cuisine evolution and techniques. Currently, Rosa owns her business MoltoOno as a private chef and boutique events caterer all over the Hawaiian Islands. Find more  at MoltoOno.com.

Address: Event will take place at a private home by Ala Moana. Registered guests will receive an email with address and directions prior to the event.

Parking: Abundant free parking in the vicinity.

Safety policy: All participants will comply with the latest guidance for group gatherings, and show vaccination card or proof of a negative test within 48 hours.and ID at check-in.
